Mandarin Orange Salad
Combine in large salad bowl:
1 head romaine lettuce, leaves pulled, rinsed, and somewhat dried
1 small can of mandarin oranges, drained
I red onion, thinly sliced
½ cup dried cranberries
In small mixing bowl, whisk together:
2 Tablespoons red wine vinegar
2 Tablespoons orange juice
Slowly mix in ½ cup olive oil
1 teaspoon Dijon mustard
½ teaspoon unrefined sea salt
Freshly ground pepper to taste.
Pour over the salad, mix, and enjoy.
